Rye Caraway, Dill Bread

Homemade rye bread.

Ingredients

  • 1 ½ c warm water 110 degree
  • 3 tbsps honey
  • 2 tbsps olive oil
  • 1 tbsp caraway seeds
  • 1 tbsp dill seeds
  • 2 tsps yeast
  • 1 ½ c rye flour
  • 2 ½ c a p flour
  • 1 tsp salt
  • 2 tbsps vital wheat gluten

    Place warm water, honey, olive oil, caraway seeds, dill seeds and yeast in a lg mixing bowl, let bloom for , add rye flour, salt and 1 1/2 c of the ap flour, turn mixer on to about 2, (kitchen aid). add remaining flour while mixing until dough forms a dough and cleans the bowl. time your mixing from the start and let it mix for total.

    Place dough in an olive oiled bowl, turn to coat, cover with a damp towel and place in a warm place until the doubles in size. Knock down and pat it out to a rectangle about the length of your bread pan, blot any oil off of dough with a paper towel, roll dough into a loaf and place in a pam sprayed bread pan, spray surface of dough with pam, let rise to double.

    Bake at 375 for , if it starts getting to dark, tent with foil. Let cool before trying to slice.
