- 1 crown broccoli
- 1 small eggplant
- ½ lb carrots (4 medium)
- 1 medium squash (yellow or zucchini)
- 1 medium yellow onion
- 1 tbsp Olive oil
- ½ tsp dried oregano
- ¾ lb uncooked ziti (12 oz)
- 1 cup ricotta cheese
- 1 large egg
- 2 cups shredded mozzarella
- 1 jar marinara sauce (24 oz)
