- 1 ½ lbs Sweet potatoes (scrubbed and cut in wedges)
- 2 tbsps vegetable oil
- ¾ tsp salt (plus ⅛ tsp)
- ½ tsp fresh ground black pepper
- 4 tbsps unsalted butter
- 2 tsps fresh thyme leaves
- 1 tsp fresh lemon zest
- 4 pcs halibut or sea bass ((1 ¼ lbs))
- 1 lb Green beans (trimmed)
