A delicious use of leftover white rice. good for dessert or a decadent saturday morning breakfast

Ingredients

  • 1 ½ cups cooked white rice
  • 2 cups Milk (separated)
  • ⅓ cup white sugar
  • ¼ tsp salt
  • 1 Egg (Beaten)
  • ⅔ cup raisins (or saskatoons, or currants, or...)
  • 1 tbsp butter
  • ½ tsp vanilla

Instructions

    In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, .

    Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook more, stirring constantly. For extra silky and smooth I sometimes replace this last 1/2 cup of milk with 1/2 cup of cream

    Remove from heat and stir in butter and vanilla.
