Red Snapper, Spicy

Ingredients

  • 4 Red Snapper Filets
  • 1 ½ tsps fresh lemon juice
  • 1 tbsp olive oil
  • ½ cup choppped green peppers
  • ½ cup chopped red onion
  • ½ cup dry white wine
  • 1 tbsp chopped cilantro
  • ½ tsp dried basil
  • ⅛ tsp tobasco
  • ¼ cup grated parmesan cheese
  • 1 cup chopped tomatoes
  • ¼ tsp cayenne pepper

    Preheat oven to 350 degrees.

    Sprinkle filets with lemon juice.

    Heat oil in skillet over medium heat. Stir in green peppers and onions. Saute about

    Add filets and cook on each side. Leave filets in skillet, add wine, cilantro, basil, cayenne and pepper. Cover and simmer .

    Transfer to an oven proof dish. Spoon tomatoes over fish. Sprinkle with parmesan cheese and tobasco. Bake about or until fish is opaque. Optional: Season with Tony's.
