Himalayan red rice cooked in squab broth

Ingredients

  • 2 pounds squab (Available from D'Artagnan)
  • 1 tablespoon coconut oil
  • ½ cup shallots peeled and minced
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 cups of water
  • 1 teaspoon powdered anatto seeds
  • ¼ cup cilantro
  • ⅛ cup minced chives
  • 1 cup red Himalayan rice

Instructions

    Heat the oil. Saute shallots and garlic. Add squab, salt, anatto powder, black pepper, water, and salt. Simmer for half an hour. Add rinsed red Himalayan rice. Cook in feu douce for half an hour.

    Sprinkle with cilantro and chives prior to serving.
