Quinoa & Mango Salad
Ingredients
- 1 cup quinoa (uncooked)
- 2 cups water
- 2 cups mango, cubed and peeled ((about 2 large mangoes))
- ½ cup green onions (sliced)
- ½ cup cranberries (dried)
- 2 tbs parsley (fresh and chopped)
- ¼ cup olive oil
- 1 ¼ tbs white wine vinegar
- 1 tsp dijon mustard
- ½ tsp salt
- ⅛ tsp pepper
