Pork Tenderloin with Grape Sauce

Ingredients

  • 1 lb Boneless Pork chops
  • 2 tbsps coconut oil
  • 1 cup vegetable broth
  • 1 cup grapes
  • 4 cups mixed leaf salad
  • 1 onion
  • ⅔ tsp salt
  • 1 tbsp thyme (dry)
  • 1 tsp garlic powder
  • 1 tsp black pepper

    Heat pan to med-high and add oil.

    Peel an slice onion. Cut and wash grapes in half. Keep separate and set aside.

    Cube pork and salt and pepper, and mix in a bowl. Add the onion to the skillet and saute for , stirring frequently.

    Increase the heat to medium-high. Push the onions ot the sides of the skillet and ad the pork in a single layer. COok for per side, until seared and thoroughly cooked. Set pork aside on a plate.

    Add the grapes ot the skillet with the onions. Saute for , then add the broth, thryme and garlic powder.

    Simmer for about , until the sauce reduces. Add the pork back to the pan. Reduce heat to medium. Stir everything together and simmer for another until done.

    Serve pork over a bed of greens and spoon grapes and sauce over pork.
