preheat oven to 400
In a large bowl add your warm milk (100) degrees, olive oil, sugar and yeast, stir and let activate for . add flour and salt and mix until a soft dough forms, it should not be too sticky, add more flour if needed.
Once dough forms dump onto lightly floured surface and knead for , sprinkle with flour if needed.

Place rolled dough ball into a olive oiled bowl, cover and let proof for , knock down and cut into 6 pieces about 2.5 ounces each, roll into balls and let rest .
Flatten each ball into about 5 inch rounds and place on well olive oiled sheet pan, turn them over to coat each side with oil, cover with a towel and let rise .
