Pineapple Fudge

Makes 1 2/3-lbs.

Use unsalted butter. It makes a tastier & healthier dish.

Ingredients

  • 1 c. evaporated milk
  • 3 c. sugar
  • 2 tbsps butter
  • 1 c. pineapple (canned, crushed, & drained)
  • 2 tsps lemon juice
  • pecans (halves (Optional))

Instructions

Keep screen awake

    Butter pan in which fudge will harden.

    Stirring constantly, slowly heat evaporated milk, sugar, & butter to boiling.

    Stir in pineapple.

    Continue stirring over medium heat; cook till mixture reaches 235º F on candy thermometer (soft ball stage).

    Cool; then stir in lemon juice.

    Beat fudge till its crystalline.

    Turn into pan & mark into squares. If desired, place pecan half on each square.
