These are great drained on a paper towel and piled on a burger or sandwich, Also good to top a salad. It just makes a great sweet relish.

Ingredients

  • 1 c red wine vinegar
  • 1 c water
  • ½ c sugar
  • 1 tbsp salt
  • 1 tsp whole peppercorns
  • 1 gt red onions sliced thin and packed in jar
  • 1 2 inches cinnamon stick opt

Instructions

    Slice your red onions and pack them in a quart canning jar. Mix vinegar, water, sugar, salt, cinnamon stick and peppercorns in a saucepan, Stir and bring to a boil. Pour hot vinegar mixture over onions, completely cover onions, place jar in microwave and nuke on high for , place lid on jar and let completely cool, refrigerate. I usually give them a couple of days.
