Pepperoni for pizza or snack sticks.

Ingredients

  • 5 ¾ tsps Pepperoni seasoning
  • 4 tbsps Water
  • 1.12 grams Prague powder
  • 3 tbsps Powdered milk
  • ½ tsp Cracked red chilis
  • ½ tsp Citric acid
  • 1 lb Ground beef.

    In a mixer with batter beater, mix for until sticky. Place in a summer sausage tube, pack tight and tie off, place a thermometer into center, smoke at 200 degrees until it reaches 165 degrees, pull and place in ice water until 60 degrees.
