Peanut Butter Cup Stuffed Brownie Cupcakes with Peanut Buttercream Frosting

Ingredients

  • 1 Brownie Mix
  • 1 bag Mini Peanut Butter Cups
  • Frosting

  • ¾ cup butter (room temp)
  • ¼ cup shortening
  • ½ cup smooth peanut butter
  • 1 tsp vanilla
  • ¼-½ cup heavy whipping cream (can use milk - makes a bit thinner)
  • 4-5 cups powdered sugar

    Freeze Mini peanut butter cups
  • 2
    Make Brownie Batter (can be from scratch or a mix.)

    Put cupcake liners in a cupcake tin
  • 4
    Pour batter in cupcake liners until the bottom is just covered
  • 5
    Place in a mini peanut butter cup with a spoonful of peanut butter on top.

    Pour rest of batter in until the cup is about 2/3 full (the peanut butter cup and peanut butter will stick out the top but will melt while baking)

    Bake like normal brownies for about at 350 degrees F.

    For the Frosting: Combine first 4 ingredients. Add about 1/4 cup of whipping cream. Add powdered sugar and adjust until you have the consistency and taste that you want.
