Slow cook or Pressure Cook (Electric pressure cooker method described). Dairy & wheat free; Low fructose version of the recipe on the jar. NB: Contains garlic powder however this is the last (least) ingredient.

Ingredients

  • 140 g Pataks Rogan Josh Paste (½ jar)
  • 700 g Beef (Chuck / Casserole; Give or take 100 g)
  • 400 g Tomatoes, Canned (Crushed)
  • 1 tb Olive oil, onion infused (FODMAP friendly)
  • 1 tsp Ginger (Minced)
  • 1 tsp Salt (Or to taste)
  • 1 tsp Stevia (Or to taste)
  • 1 Eggplant (medium)
  • 1 Green Capsicum
  • 1 Carrot (Large)
  • 1 Celery (Stalk)
  • 4 cups Basmati Rice (Steamed; To serve)
  • 1 Coriander, fresh (To serve)

    Chop vegetables and beef coarsely.

    In pressure cooker, combine curry paste, crushed tomatoes, oil, ginger, salt & sugar.

    Add meat and vegetables and fold until evenly covered in sauce.

    Set electric pressure cooker to meat/stew setting, or manually set to . (Total cooking time approx. including time to pressurise and quick release pressure)

    Serve with steamed rice, fresh coriander and coconut yoghurt. NB: Pappadums are gluten free.

    VARIATION: Slow Cooker - Coat meat in gluten free flour. Brown in oil and combine as per method above. Cook approx . VARIATION: Oven - Coat meat in gluten free flour. Brown in oil and combine as per method above. Cook in a heavy/cast iron pot for approx .
