Traditional Venezuelan recipe for Christmas & New Year Eve.
Ingredients
- 500 grams Flour
- 5 grams Yeast
- 50 grams Sugar
- 1 teaspoon Salt
- 200 ml Milk
- 2 Eggs
- 50 grams Butter
- 400 grams Smoked Ham
- 100 grams Bacon
- 300 grams Green Olives filled with Red peppers
- 300 grams Black Raisins
- 30 ml Rum
- 15 grams Brown Sugar
- 200 grams Cream Chesse (Optional)
- 1 Egg Yolk

- 1Prepare the dough Warn the Milk, Melt the Butter in Microwave. Mix Yeast, Milk, Sugar and a little of Flour. Put all Flour in a Mixing Bowl to use the Kitchen aid Mixer (if available) or put the flour in a clear surface like a Volcano. Mix Salt to Milk Mix and add to Mixer or Flour, Add the Eggs and Mix for till the flour has absorbed everything. If still humid and pasty, add little by little more flour till the dough does not hang in the walls of the mixer or the surface. Put the dough in a bowl and cover with a humid cloth and wait 1-1- till it double in size. sparkle some flour on a flat surface
- 2Put the raisins in a bowl with the rum. If you need more liquid to cover the raisins, add some water. Take the dough ball and using a rolling pin, make a square till the height of the dough is 3-4 millimeters. keep rotating while you use the rolling pin. Cover the dough with the smoked ham in layers leaving 5 centimeters in one edge and two-three centimeters on the other borders, Put the green olives spread across the surface. Do the same with the Raisins. If you like to add Cheese Cream make a little block like an italian Grisini and put the cheese on the size of the square that you will roll 1st. The idea is that the cream cheese will end at the center of the final bread. Start making a roll with the beginning circle of aprox. 4 centimeters and keep making the roll till you reach the other end.
