Oriental salad

A family favourite and you can add almost anything else you like to the basic recipe depending on what you have in the fridge. Go for vegetables with colour e.g. carrot, capsicum, chick peas are great.

Ingredients

  • ½ wombok (thinly sliced)
  • 7 spring onions (chopped 5 mm lengths)
  • 100 gms sliverd almonds or pinenut (toasted if preferred)
  • 100 g changs fried noodle (slightly crushed)
  • Salad Dressing

  • ¼ cup white vinegar
  • ¼ cup castor sugar
  • 1 tblsp soy sauce
  • ½ cup olive oil
  • Additions

  • 1 carrot (grated)
  • ½ capscium / pepper (any color) (finely sliced)
  • 125 g chick pea

Instructions

  • 1
    Combine all dressing ingredients in shake proof container til well combined.

    Toss salad ingredients. Add almonds/pinenuts, dried noodles and dressing when ready to serve.

    To make a one bowl meal add BBQ chicken or pork and toss through
