One Pot Spanish Chicken

A nice Spanish inspired supper for cold evenings.

Ingredients

  • 500 g boneless chicken thigh
  • 150 g chorizo (sliced)
  • 2 onions (sliced)
  • 4 cloves garlic (crushed)
  • 4 sprigs thyme
  • 1 tsp smoked paprika
  • 500 ml passata
  • 500 ml chicken stock
  • 1 tb tomato puree
  • 1 red pepper
  • 1 green pepper
  • 70 g green olive (sliced)
  • 2 tbs flat leafed parsley
  • 5 medium potato (peeled and cubed)

Instructions

    Fry the onion in a dash of oil for then add in the garlic and chorizo, cook for a further few minutes

    Stir the thyme and paprika in.

    Pour in the passata and stock. Stir in the puree.

    Bring to a simmer and then add the chicken thighs and cubed potatoes
