Make ahead breakfast

Ingredients

  • 6 Large eggs
  • 6 Egg whites
  • ¼ tsp Salt
  • 3 oz Sliced ham (4 slices chopped)
  • 2 oz Swisscheese (Chopped)
  • ½ cup Finely chopped red pepper
  • ¼ cup Chopped scallions

    Preheat oven to 350 degrees. Lightly spray a 12 cup muffin tin with Pam.

    In a medium bowl beat whole eggs and egg whites. Season with salt and a pinch of pepper. Mix in chopped ham, Swiss cheese, bell peppers and scallions.

    Pour about 1/4 cup egg mixture in each muffin cup

    Bake about or until egg is set.
