Clean cauliflower and break into large floret pieces. In a large piece of aluminum foil, tightly wrap cauliflower florets and peeled garlic cloves that have been seasoned with salt and pepper and place in oven and bake for or until tender.

Place the tender cauliflower florets and garlic cloves into a casserole dish and mast to desired consistency.

Add extra virgin olive oil and cream and mix in well.

Add the grated Romano cheese and season with salt and pepper as desired.
(Can be made ahead and reheated in a 350°F oven until piping hot.)
I've now cooked this dish twice. First off, 350 F is too low - raise the temp to 400 F, cooking for 40-45 minutes. Second, I found that instead of mashing, a stick blender works better. Third, the cream can be substituted with cream cheese, and it works well. This is a tasty dish!
