No-Bake Lemon Cheesecake

Simple and easy cheese cake recipe - served this in 4 deep tiramisu glasses :)

Ingredients

  • 250gms Marie Biscuits (any plain sweet biscuits will do. Crush them by hand or in a food processor)
  • 125gms butter, melted
  • 375gms softened cream cheese
  • 1 lemon, zested
  • 2 tsps vanilla essence
  • ½ cup lemon juice
  • 400 grams condensed milk

    Process biscuits until finely crushed. Add butter and mix well.

    Press the mixture firmly into the base of the glasses

    Refrigerate for .

    Beat the cream cheese until smooth and creamy.

    Add lemon zest and vanilla and beat well.

    Gradually add the condensed milk and lemon juice, and continue to beat until smooth.

    Pour into the prepared tin and refrigerate overnight.

    Decorate with raspberries or whatever to top!
