The Astute Bachelor has a breakfast-in-bed strategy that includes serious coffee, freshly squeezed juice, perhaps with a little vodka to lubricate the conversation, and this secret French toast formula. The payoff is good for weeks. Our version uses rich, peel-apart butter-flake rolls as the foundation for a sweet and smoldering apricot-orange sauce with glazed bananas.Look for the rolls at the supermarket bakery or substitute four slices of your favorite bread.

Ingredients

  • 3 large eggs
  • ⅓ cup milk
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 4 slices Texas toast
  • Sauce

  • 2 tablespoons butter
  • ½ cup apricot preserves
  • 1 teaspoon sugar
  • ¼ cup orange juice
  • 1 ripe banana (sliced)

    To make the batter: Combine all the batter ingredients except the Texas toast. Pour into a wide shallow dish. Coat both sides of the Texas toast in batter allowing to soak on each side.

    To make the sauce: Melt 1/2 tablespoon of the butter in a saucepan over medium-high heat. Stir in the preserves, sugar, and orange juice. Cook until thick and caramelized but liquid enough to be poured, about , stirring occasionally.Add the banana slices. and cook until soft. Reduce the heat to low to keep the sauce warm.

    Melt the remaining butter in a large skillet over medium-high heat. Cook the Texas toast slices until golden brown, turning once. Serve hot with the sauce poured over the top.
