Monster Cookies - Gluten Free

Ingredients

  • 1 cup oat flour (120 grams)
  • 1-½ cup quick cooking oats (150 grams)
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 4 tbsps butter
  • 1 large egg, beaten (should measure 50 grams)
  • 1 egg yolk (or 2 eggs if one egg doesn't measure 50 grams)
  • 1 tsp vanilla
  • 1 cup brown sugar
  • 5 oz chocolate chips
  • 5 oz M&M's
  • ½ cup creamy peanut butter (no-stir kind that doesn't separate)

    Preheat oven to 350 degrees. Line baking pan with parchment paper.

    Mix together all dry ingredients and set aside
  • 3
    in kitchen aid mixer combine butter, peanut butter, egg, egg yolk, vanilla and brown sugar. Mix until creamy.

    Add dry ingredients until just incorporated into wet ingredients.

    Add chocolate chips and M&M's until thoroughly mixed in. Dough should be thick but not stiff. Using large cookie scoop (2 Tablespoons) place dough on cookie sheet.

    Let sit for on baking sheet before transferring onto cooling rack.
