Mediterranean Zucchini and Chicken Bake

Ingredients

  • 2 boneless chicken breasts
  • 2 tbsps EVOO
  • 1 tsp each garllic powder and oregano
  • ½ tsp paprika
  • 2 med zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup kalamata olives, sliced
  • 1 cup fresh spinach
  • 1 cup feta
  • 2 tbsps EVOO
  • 2 tbsps balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 1 red onion, sliced

    Preheat oven to 375 degrees. Make dressing with 2 Tbsp EVOO, balsamic vinegar, lemon juice and 1 tsp oregano. Set aside.

    Slice chicken into strips and season with spices. Heat 1 Tbsp EVOO and add chicken. Cook for . Set aside.
