chicken broth
1 cup
butter, cubed

cream cheese

Peel and cube potatoes. Place in a large stockpot and cover with water. Allow potatoes to sit for at least
30 minutes

Drain and rinse potatoes. Place potatoes in slow cooker. Add broth. Cover, and cook High for
4 hours
.

Do not remove the excess water from slow cooker. This adds to the creamy texture.

Mash potatoes with a masher or electric beater, adding cream cheese and butter to achieve a creamy consistency.
