Ingredients

  • 2 ¼ c. cake flour
  • 1 ⅓ c. sugar
  • 2 tsps baking powder
  • ½ c. shortening
  • ¼ c. maraschino juice (room temperature)
  • maraschino cherries ()
  • ½ c. milk (room temperature)
  • 4 large eggs (separated & at room temperature)
  • ½ c. chopped nuts
  • Fluffy White Icing

  • ¾ c. sugar
  • ¼ c. water
  • 2 eggs (separated)
  • 1 tsp vanilla

    Preheat oven to 350° F. Grease & flour 2 8-in. round cake pans. Cut 16 maraschinos into 8 pieces.

    Stir flour, sugar, & baking powder together.

    Add shortening, cherry juice, cut-up cherries cherries, & milk to flour-sugar; mix on slow to medium speed of electric mixer for ., frequently scraping sides & bottom of bowl.

    Add egg whites & continue beating for ., scraping bowl frequently.

    Fold nuts into batter.

    Divide batter into cake pans & bake .

    While cake is cooling, prepare FLUFFY WHITE ICING: Mix sugar & water in saucepan. Cover pan & boil, WITHOUT STIRRING, for . Remove cover & continue boiling, WITHOUT STIRRING, till mixture reaches 240-242° F on candy thermometer. In the meantime, beat egg whites on slow speed of electric mixer till stiff. Beating constantly, slowly pour hot syrup into beaten egg whites. Add vanilla; then beat on high speed till frosting is fluffy & will hold its shape.

    Frost cool cake & decorate with maraschino cherries.
