Ingredients

  • ¼ cup Chopped bell pepper (Any color)

  • ⅓ cup Tomatoes with green chilies
  • ½ cup Refried beans
  • ¾ tsp Cumin
  • ¼ tsp Chili powder
  • ¼ tsp Smoked paprika
  • 1 cup Shredded cheese
  • ½ cup Sour cream
  • ½ cup Pico de gallo
  • ¼ cup Chopped scallions
  • 8 Russet potatoes
