Lasagna Soup
Ingredients
- 2 tbsps Extra Virgin Olive Oil (Divided)
- 1 lb Lean Ground Beef
- 1 Large Yellow Onion (Diced (Should be about 2 cups))
- 3-5 cloves Garlic (Minced (To Taste))
- 4 cups Low-Sodium Chicken Broth
- 14.5 oz Can Petite Diced Tomatoes
- 14.5 oz cans Crushed Tomatoes
- 2 ½ tbsps Tomato Paste
- 1 ¾ tsps Dried Basil
- ¾ tsp Dried Oregano
- ½ tsp Dried Rosemary (Crushed)
- ½ tsp Fennel Seeds (Crushed)
- ½ tsp Dried Thyme
- 1 tsp Granulated Sugar
- 1 ½ tbsps Fresh Parsley (Chopped (Plus some for garnish))
- Salt and Pepper ((To Taste))
- 8 Lasagna Noodles (Broken into bite size pieces (6.5 oz))
- 1 ¼ cups Shredded Mozzarella Cheese ((5 oz))
- ½ cup Finely Shredded Parmesan Cheese ((2 oz))
- 8 oz Ricotta Cheese
