Lamb patties and mint yogurt sauce

This is an easy and quick mid week supper dish

Ingredients

  • 250 g lamb mince
  • 1tbls mint jelly
  • 1 tsp cumin seed
  • 1tbls chopped fresh mint leaf
  • olive oil (for frying)
  • 80 g cherry tomato (halved)
  • 2 pitta bread (toasted and split)
  • 0.5 egg (beaten)
  • 80 g mixed salad leaf

    Preheat the oven to 170C. In a bowl combine the mince, mint jelly, cumin seeds and the egg. Season and shape into 4 small patties. Place in the fridge for .

    Mix the chopped mint with the yogurt in a bowl and season. Set aside.

    Heat the olive oil in an oven proof frying pan and then fry the patties until coloured, then place in the oven for a further . (I often don't bother with this and just continue to fry them until they are cooked.)

    In a bowl, toss the salad with the cherry tomato halves.

    Serve the patties in the toasted pittas with the minty yogurt sauce and salad.
