Pasta with oil and vinegar dressing, olives, tiny tomatoes, feta cheese, fresh basil, red and yellow peppers, brocolli, shredded carrots.

Ingredients

  • 8 ounces Rotelle Pasta
  • ½ cup oil & vinegar (Make dressing ahead of time)
  • ½ cup feta cheese, diced
  • ⅓ cup olives, pitted greek
  • ½ cup shredded carrot
  • 1 cup brocolli, blanched
  • 1 cup red and yellow bellpeppers, julienne or matchstick
  • ¼ cup Basil, Chiffonade
  • 4 each Basil Whole Leaves

Instructions

    Cook pasta in salted boiling water until just past al dente, while blanching brocolli until tender. Run both under cold water until cooled and no longer cooking.

    Mix all ingredients in large bowl. Add dressing. Refrigerate for , taste and add more dressing if necessary. Use whole basil leave for plating/decoration.
