A chefs recipe for an amazing Singaporean hawkers style meal

Ingredients

  • 1 chicken
  • 2 cups basamati rice
  • 1 teaspoon salt
  • 3-4 chilli (or to taste)
  • 1 lime
  • 2 teaspoons crushed ginger (or to taste)
  • 3 teaspoons crushed garlic (or to taste)
  • sesame oil
  • onion oil
  • 1 cucumber
  • soy sauce
  • 1 clove garlic
  • 1 spring onion
  • 1 table spoon vegetable oil
  • 1 pot water

    1 Prepare the Chicken • Boil water add chicken and bring to boil again • Turn heat down and simmer until chicken is cooked- Size 9 – approx , Size 18 – approx • Take chicken out and chop into pieces • Keep the chicken stock for chilli sauce and rice

    Prepare the Rice • Fry in oil, shallots, ginger and garlic • Add basmati rice and fry till brown • Place with salt into a rice cooker • Add stock instead of water and boil until fully cooked

    Prepare the Chilli Sauce • Place ginger, garlic and (10) chilli’s into a blender with 1 Malaysian lime and blend until its turned into liquid • Place sauce in a bowl and add onion oil, sesame oil, stock and salt to taste

    Prepare sides • Chop a cucumber into slices • Place some soy sauce into a small sauce bowl • Add a chopped clove of garlic, some spring onion and a some oil in a small sauce bowl and mix

    Serve the Chicken on the rice and place the chilli sauce and sides in the amounts that suit your taste.
