The best dinner rolls ever, well worth the effort. I changed the directions a little to make it easier for everyone, there just a little easier to understand the directions now. Ingredients were not changed.

Ingredients

  • 2 medium eggs
  • ½ c sugar
  • 3 tsps yeast
  • ¼ c warm water
  • 1 c warm milk
  • ½ c melted butter
  • 1 tsp salt
  • 5-5 ½ c flour
  • 1 tsp per cup flour (vital wheat gluten) (opt)

    In a large bowl add egg, sugar and salt, mix well, Warm water, milk and butter in microwave, You want it about 110 degrees. Add the milk mixture with the egg mixture, stir until blended, Add yeast, stir and then let rest for . Add flour and gluten 1 c at a time stirring until smooth, When dough starts cleaning the bowl dump it on a clean surface and knead small amounts of flour into it until a stiff dough forms and it cleans up your surface, You end up kneading it for about . Place the ball of dough in an oiled bowl, turn to coat cover with plastic wrap and let proof for 2 and up to , You can even make this the night before and leave out covered so it matures over night, Then start the next step before serve time.

    An hour before serve time, Punch down dough, I use a scale and weigh each roll at 2.1 oz each, Let them rest for . roll into a ball, dunk it in melted butter and place in appropriate pan. Cover and let proof until double in size bake at 375 degrees for or until browned. If you run the full batch it makes 24 rolls, if you change servings to 1 it makes 6 rolls, 8x8 cake pan
