Goats Cheese and Caramelised Onion Bruschetta

This is great served as a starter or an impressive lunch.

Ingredients

  • 4 ciabatta roles (We find Ciabatta bread works best - but does not need to be)
  • 4 / 6 table spoons olive oil
  • 2 large red onions (finely sliced)
  • 1 table spoon brown sugar (Can use white)
  • 1 table spoon balsamic vinegar
  • 6 oz goats cheese (Use as much / little as you want)
  • 1 / 2 gloves garlic

    In a pan heat some oil and add the onions. Add the sugar and vinegar and stir. Cook on a medium / high heat for a few minutes. Turn to a low heat and cook the onions for if you can until soft. If you don't have time then cook them on a high heat for , but they taste better if you can cook for longer.

    Meanwhile - slice the rolls in half. Brush with some olive oil and crushed garlic. I then cut them in half again so they are easier to pick up. Put under the grill until slightly brown.

    Put onions on bread and top with cubes of goats cheese

    Put under the grill for a couple of minutes until cheese is melted and serve
