Gluten free (GF) tortillas

Ingredients

  • 2 eggs
  • ¾ cup water
  • 1 cup tapioca flour
  • ¼ cup coconut flour
  • ¼ tsp salt

Instructions

    Combine all ingredients in a medium bowl, whisking until smooth.

    Heat cast iron skillet over medium heat then add coconut oil to the pan.
  • 3
    Pour approx 1/3 cup of batter into the pan. Cook per side. The tortillas should be soft and foldable but golden brown.
