Frittata, Potato, kale and sausage

Ingredients

  • 5 large Eggs
  • 3 Egg whites
  • 2 tbs Romano cheese
  • 2 tsps Olive oil
  • 6 oz Sweet Italien chicken sausage (Casing removed)
  • 1 small Onion, chopped
  • 2 med Yukon gold potatoes
  • ⅛ tsp Garlic powder
  • ⅛ tsp Paprika
  • 1 cup Chopped kale

    Preheat oven to 400 degrees

    Beat whole eggs and egg whites together in a large bowl. Add grated cheese, 1/8 tsp salt, and pinch of black pepper
  • 3
    Heat nonstick oven proof skillet over med heat. Add 1 tsp oil, sausage and onions to pan and cook until sausage is cooked through. Transfer to a plate.

    While sausage is cooking, chop potatoes into 1/2 inch pieces. Cook in remaining 1 tsp oil. Season with 1/2 tsp salt, garlic powder and paprika. Cover and cook potatoes until crisp and tender. Add kale, cover and cook until tender.

    Add sausage and onions and stir to combine. Pour eggs over. Reduce heat to low and cook until edges are set- .

    Transfer skillet to oven and bake until frittata is completely set and cooked through, .
