Ingredients

  • 2 medium tomatoes (½ in. thick slices)
  • 2 medium onions (thinly sliced)
  • 2 medium peppers, whole (green; cut into rings)
  • 12 mushrooms (halved)
  • salt
  • pepper
  • 4 tsps butter

Instructions

    Set out 4 9x12-in. pieces of aluminum foil which can withstand grilling, shiny side up.

    Alternate slices of tomatoes, peppers, & onions in an overlapping row on each. sheet.

    Top each packet with mushrooms.
  • 4
    Season with salt & pepper; then top dot each packet with 1-tsp. of butter.

    Close each packet with double fold along top seam; turn ends up & seal securely.

    Grill over moderate heat till vegetables are done (app. .).
