Fresh Pineapple Salad Boats

Ingredients

  • 2 pineapples (chilled)
  • 3 oranges (chilled)
  • 1 ½ c. whole strawberries (fresh)
  • 2 avocados
  • Honey-Lime Dressing

  • ½ c. honey
  • ¼ c. lime juice
  • 1 dash salt

Instructions

Keep screen awake

    Cut each pineapple in half lengthwise, all the way through stem.

    With paring knife, loosen pineapple fruit from skin close to eyes to make 4 shells. Remove fruit, cut out sore, & discard meat.

    Peel oranges; then slice into rounds.
  • 4
    Line 3 of the pineapple shells with the orange slices. Place some of the slices so that they reach just above the edges of each pineapple shell forming a scallop.

    HONEY-LIME DRESSING: Mix all ingredients well.

    Slice avocados & brush with Hone-Lime Dressing.

    Toss together avocado slices, strawberries, & pineapple.

    Heap avocado-fruit mixture inside pineapple shells.

    Place shells in middle of dinner/buffet table with remaining dressing along side.
