French Onion Soup

For the roasted beefy flavor that usually comes with homemade beef broth, we microwaved beef bones before tucking them into the slow cooker around the onions. As for the onions... we found that a mix of apple butter and soy sauce gave the onions a silken texture and deep color that made them taste like they took hours of stovetop browning. Be sure to keep an eye on the onions starting at 8 hours the first time you make this soup so they don't burn. Look for beef bones in the freezer section of your grocery store (make sure to thaw completely)

Ingredients

  • 2 lbs beef bones (thaw if frozen)
  • 6 onions (halved and sliced ¼ inch thick)
  • ½ stick unsalted butter (melted)
  • 1 tablesppon brown sugar
  • 5 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme (or ¼ dried thyme)
  • ¾ cup dry sherry
  • ¼ cup soy sauce
  • 2 cups low-sodium chicken broth
  • 2 cups beef broth
  • 1 loaf French baguette (cut into ½ inch slices)
  • 2 ½ cups Gruyère Cheese (shredded)

    Arrange beef bones on paper-towel lined plate and microwave until well browned:

    Add onions, butter, 1 teaspoon salt, 1 teaspoon pepper, sugar and thyme to slow cooker. Whisk flour, apple butter, sherry, and soy sauce together in bowl until smooth, then stir into slow cooker. Nestle microwaved bones into slow cooker. Cover and cook until onions are softened and deep golden brown on high

    Discard beef bones. Bring chicken broth and beef broth to boil in covered saucepan over high heat, then stir into slow cooker. Let soup sit until heated through, about . Season with salt and pepper to taste

    Just before serving, position oven rack 6 inches from broiler element and heat broiler. Lay bread on baking sheet and broil until golden on both sides ( per side) Sprinkle cheese over one side of bread and continue to broil until melted and bubbly () Ladle soup into serving bowls and top with broiled cheese bread
