Flounder with Broccolini

Only takes 20 minutes to make from start to finish

Ingredients

  • 1 bunch broccolini
  • 3 tsps olive oil
  • ¾ halved cherry tomatoes
  • 2 cloves garlic, minced
  • 1 pinch crushed red pepper flakes
  • 4 flounder fillets
  • 2 tbs lemon juice
  • 1 tsp fresh oregano, chopped
  • 2 tbs parmesan cheese

    Preheat oven to 450 degrees. Lightly spray a 9x13 baking pan with pam.

    Trim 1 inch of the stems off the broccolini and half the stalks lengthwise. Add 2 tsp olive oil to a skillet and add broccolini. Season with 1/8 tsp salt. Saute about . Add tomatoes, garlic and pepper flakes. Cook more.

    season flounder with 1/4 tsp salt and black pepper to taste. Put fish in baking dish and drizzle with remaining tsp oil and lemon juice. Sprinkle with oregano.

    Bake fish about until partially cooked. Remove from oven and top with broccolini and parmesan. Return to oven and bake 10 more minutes.
