Ingredients

  • 2-½ cup salsa
  • ¼ cup chopped cilantro
  • 1 teaspoon cumin
  • 8 corn tortillas
  • 8 oz cooked chicken breasts, shredded
  • ¾ cup canned black beans (rinsed and drained)
  • 1 small red onion, finely chopped
  • 1 cup reduced fat shredded cheese

    Preheat oven to 350 degrees. Spray an 7x11 inch pan with cooking spray.

    Combine salsa, cumin, and cilantro in small bowl.

    Dip a tortilla in salsa. Place on a plate and top with 2 tablespoons of salsa, 1/8 of chicken, beans and onions. Sprinkle with 1 tablespoon of cheese. Roll up and place seem side down in baking dish. Repeat with remaining tortillas.

    Spoon remaining salsa mixure over the enchiladas and sprinkle with remaining cheese. Bake until bubbly - aboiut .
