This is basically a baking powder biscuit recipe, but made so that it does not have to be kneaded & cut. It gets it's name because old-time housewives could use it to whip up quick, emergency biscuits when unexpected company arrived.

Ingredients

  • 2 c. flour
  • 4 tsps baking powder
  • 1 tsp salt (Optional)
  • 2 tbsps shortening
  • 1 c. milk (Liquid may also be ½ milk, ½ water.)

Instructions

Keep screen awake

    Grease baking pan or muffin tins well. Preheat oven to 450-460° F.

    Mix together flour, baking powder, & salt, if latter is used.

    Cut shortening into flour mixture with fingertips or 2 knives.
  • 4
    Gradually add milk, stirring with a knife! (The finished dough should be soft enough drop from a spoon.)

    Drop dough by spoonfuls onto baking sheet or fill muffin cups about 2/3 full with dough.

    Bake .
