My sister BarBara Green started making this casserole when I was in 8th grade, 47 years later we still enjoy this casserole, now there's only 2 of us it's to big but it does freeze well after it's cooked, I cut it into portions and put it in tupperware.

Ingredients

  • 1 lb lean ground beef
  • 1 large white onion diced
  • 8 cloves fresh garlic diced fine
  • 6 oz sliced black olives
  • 1 tsp salt
  • 1 ½ tsps ground cumin
  • 1 ½ tbsps chili powder
  • 16 oz tomato sauce
  • 15 oz diced tomatoes
  • 1 c water
  • 1 c sour cream
  • 1 c cottage cheese sm curd
  • 7 oz ortega mild green chiles
  • 1 lg bag nacho doritos broken up some
  • 3 c shredded cheddar cheese

    Preheat oven to 350. Spray a 9x13 casserole with cooking spray, set aside In a large skillet add beef, Brown beef well, drain fat, Add onion, garlic,1/2 can sliced olives. salt, cumin, chili powder, tomato sauce, diced tomatoes juice and about 8 ounces water. simmer for about .

    In a separate bowl mix cottage cheese, sour cream and diced green chilis. break up the doritos a little bit, In a 9x13 inch pan sprayed with pam, put half of the meat mixture to just cover bottom of pan, and then 1/2 of the doritos and then 1/2 the cheese and all of the cottage cheese mixture. Add the rest of the doritos then the rest of the meat mixture, the rest of the cheese and then the olives.

    Bake covered and uncovered. If like us we bake it uncovered the whole time, we like it crunchy on top, The cheese does get a little chewy though.
