Eldorado casserole
My sister BarBara Green started making this casserole when I was in 8th grade, 47 years later we still enjoy this casserole, now there's only 2 of us it's to big but it does freeze well after it's cooked, I cut it into portions and put it in tupperware.
Ingredients
- 1 lb lean ground beef
- 1 large white onion diced
- 8 cloves fresh garlic diced fine
- 6 oz sliced black olives
- 1 tsp salt
- 1 ½ tsps ground cumin
- 1 ½ tbsps chili powder
- 16 oz tomato sauce
- 15 oz diced tomatoes
- 1 c water
- 1 c sour cream
- 1 c cottage cheese sm curd
- 7 oz ortega mild green chiles
- 1 lg bag nacho doritos broken up some
- 3 c shredded cheddar cheese
