Peel and slice potatoes 1/4 inch thick. bring water to a full rolling boil, dump in potatoes and citric acid leaving burner on high, stir and let boil for , drain and flush with cold water until the potatoes are cold,
Dry on towels ( just until they're not dripping)and place in single layer on dehydrator racks, run dehydrator at 125 to 130 degrees , they will be dry when they are brittle, store in airtight container for up to 1 year. 10 pound of potatoes will yield 1 half gallon of sliced potatoes.
