Creole Cocktail Sauce

This recipe makes 3-c. of sauce.

Ingredients

  • water
  • 2 tbsps cornstarch
  • ¼ c. tomato paste
  • ⅔ c. tomato sauce
  • 2 tsps salt
  • 1 dash pepper
  • 1 tsp sugar
  • 1 pinch cloves (ground)
  • 1 dash hot pepper sauce
  • 3 slices bacon
  • ⅓ c. onions (finely chopped)
  • ½ c. celery (finely chopped)
  • ⅓ c. peppers, whole (green; finely chopped)

Instructions

    Blend cornstarch with 2-tbsp. cold water.

    Pour cornstarch into pot & add 1/4 c. hot water, tomato sauce, tomato paste, salt, pepper, cloves, sugar, & hot pepper sauce. Cook slowly for .

    Fry bacon till crisp; then set aside.

    Drain drippings from skillet, leaving a light film in bottom.

    Add onions, celery, & peppers to skillet; cook .
