Homemade corned beef is easy to do, it just takes time to sit in the refrigerator for 5 days. Better than store bought and a lot cheaper. This recipe makes 6 pounds corned beef, I divide it into 3 roast and freeze 2 when I make it. in the raw cured state it freezes well in ziplock bags.

Ingredients

  • 6 pounds beef roast raw your choice (chuck, brisket) or other
  • 1 gallon water
  • 1 c sea salt
  • ½ c sugar
  • 1 tsp prague powder (instacure #1) (prague powder can be bought at amazon instacure #1)
  • 3 tbsps pickling spice
  • ½ tsp cracked red chilis (opt)
  • 3 cloves fresh garlic crushed
  • 4 bay leaves
  • 1 meat injector (opt)

    I cut a 6 pound roast into 3 equal pieces, in a large plastic bowl stir water, salt, prague powder and sugar together until dissolved, place meat into brine, pump about 10 ounces of brine into meat in numerous places, add pickling spice, cracked reds, garlic and bay leaves, place a heavy dinner plate on top of meat and press down. cover and refrigerate for 5 full days.

    After 5 days remove from brine. discard the brine, I cook 1 roast and put the other 2 in Ziploc bags and freeze, thats up to you. to cook a roast I put the roast in a stock pot, cover with water with 1 1/2 tbsp pickling spice and simmer for , place corned beef in oven covered, Add carrots and potatoes in for . and cabbage an additional .
