Corned Beef Home Cured
Homemade corned beef is easy to do, it just takes time to sit in the refrigerator for 5 days. Better than store bought and a lot cheaper. This recipe makes 6 pounds corned beef, I divide it into 3 roast and freeze 2 when I make it. in the raw cured state it freezes well in ziplock bags.
Ingredients
- 6 pounds beef roast raw your choice (chuck, brisket) or other
- 1 gallon water
- 1 c sea salt
- ½ c sugar
- 1 tsp prague powder (instacure #1) (prague powder can be bought at amazon instacure #1)
- 3 tbsps pickling spice
- ½ tsp cracked red chilis (opt)
- 3 cloves fresh garlic crushed
- 4 bay leaves
- 1 meat injector (opt)
