Ingredients

  • ½ cup Quinoa Flour (or Flour)
  • 1 tsp Baking Powder
  • 1 Egg
  • ¼ cup Water
  • ½ tsp Salt
  • ½ tsp Pepper
  • 1 Tbls. Olive Oil
  • 1 cup Corn
  • 1 Red Bell Pepper
  • 1 Jalapeno (* optional)
  • ¼ cup Cilantro (or dill or parsely)
  • ¼ cup Scallions (or chives)

Instructions

Keep screen awake

    Combine all ingredients till well blended, will be lumpy. To fry, put olive oil in pan and spoon a good size dollop. Cook about each side. Serve with an assortment of different sauces. You can also bake, spoon in a muffin pan, 350' for OR bake on parchment paper. Tzakiki (yogurt&cucumber),sour cream,yogurt, Cilantro Jalapeno Sauce(Look up in my reciepes) or Out Back Sauce(also in my selection of reciepes).
