Cod Chowder
Ingredients
- 3 tbsps unsalted butter
- 1 large onion (diced)
- 2 large carrots (peeled and diced)
- 2 ribs celery (diced)
- 1 tsp salt
- ¼ tsp black pepper (freshly ground)
- 3 gloves garlic (sliced)
- ½ cup all purpose flour
- 1 box seafood stock ((32 oz))
- 3 cups whole milk
- 1 ¼ lbs russet potatoes (peeled and diced)
- 3 sprigs fresh thyme (plus more for granish)
- 1 ½-1 ¾ lbs skinless cod fillet (cut into 1 inch pieces)
