Ingredients

  • 3 tbsps unsalted butter
  • 1 large onion (diced)
  • 2 large carrots (peeled and diced)
  • 2 ribs celery (diced)
  • 1 tsp salt
  • ¼ tsp black pepper (freshly ground)
  • 3 gloves garlic (sliced)
  • ½ cup all purpose flour
  • 1 box seafood stock ((32 oz))
  • 3 cups whole milk
  • 1 ¼ lbs russet potatoes (peeled and diced)
  • 3 sprigs fresh thyme (plus more for granish)
  • 1 ½-1 ¾ lbs skinless cod fillet (cut into 1 inch pieces)

    Heat butter in a large stockpot over medium heat. Add onion, carrots, celery, salt and pepper and cook, stirring occasionally, .

    Stir in garlic and cook . Sprinkle with flour and cook .

    Whisk in stock and milk. Stir in potatoes and thyme sprigs. Increase heat to medium high and bring to a boil. Reduce to medium low and simmer . Stir in cod, cover and cook , until fish is opaque. Remove thyme stems and serve.
