Chocolate Coconut Cones

Not sure whether to classify this as cookie or candy, but I will classify it as delicious.

Be sure that you do use canned coconut. The stuff in the bags is too dry.

Ingredients

  • ¼ c. butter (unsalted)
  • 2 c. powdered sugar
  • ¼ c. evaporated milk
  • 8 oz coconut (canned)
  • ½ c. chocolate chips (semisweet)

Instructions

Keep screen awake

    Cover cooling rack with waxed paper. Lay out extra waxed paper or butter baking sheet. If necessary, finely cut coconut.

    Melt butter & keep over heat till deep golden brown.

    Blend sugar & milk into butter.
  • 4
    Gradually work in coconut.

    Drop mixture by teaspoons onto baking sheet/waxed papper. When cold, shape into cones with fingers.

    In the meantime, melt chocolate chips in top of double boiler over hot, but not boiling water.

    Remove from heat & mix till chocolate is smooth & free from lumps.

    Cool till temperature of chocolate reaches 90-95° F on candy thermometer (about .).

    Twirl bottom of each cone in chocolate; then place on cooling rack to harden.

    So glad to see this recipe here! Mom used to make this when I was a child and I was hoping to make it for Christmas this year as my daughter and her husband are coming to share their first married-life Christmas with us!
