Nothing like home smoked jalapeno in adobo sauce, The recipe calls for red jalapeno's but you can use green, Also when there done I pulse mine in the processor, most recipes call for them chopped, I use them in my chipotle ketchup and they need to be fine, Also good in meatloaf. I added a picture of my indoor smoker from Amazon.

Ingredients

  • 10 oz red jalapenos washed
  • ¾ c chopped fresh tomato not roma's
  • ¾ c chopped onion
  • 6 cloves fresh garlic chopped
  • 1 tsp italian seasoning blend
  • 1 ½ tsps sugar
  • ¼ c white vinegar
  • 2 tsps white vinegar
  • 1 ½ tsps salt
  • 3 tbsps tomato paste

    Wash the jalapenos, smoke the cleaned jalapenos with stems on, in a single layer in your stovetop smoker 180 - 200 degrees with 3 tbsp hickory chips for . set aside. remember to start timing when you first see smoke.

    In a blender add tomatoes, onion, garlic, italian seasoning, sugar, vinegar, salt and tomato paste, blend until smooth, pour sauce and peppers into sauce pan, bring to a low boil, reduce heat to a low simmer cover and simmer for about to an hour, stirring occasionally, the sauce will darken as it cooks. place in jar and refrigerate, keeps for months
