Chilled Lemon Flan

A quick but rather calorie laden (aren't all the best ones!) dessert. I prefer to use ginger biscuits rather than the traditional digestive.

Ingredients

  • 6 oz digestive biscuit
  • 3 oz butter
  • 5 fl oz double cream
  • 6 oz tin of condensed milk
  • 2 large lemons
  • raspberries to decorate

Instructions

Keep screen awake

    Crush the biscuits
  • 2
    Melt the butter and then mix it into the biscuit crumbs
  • 3
    Press the mixture into the base and up the sides of a 7 inch flan dish
  • 4
    Bake of approx. at 150C
  • 5
    Mix together the cream, condensed milk and finely grated lemon rind
  • 6
    Slowly beat in the lemon juice. The mixture will thicken.

    Pour mixture into flan case and chill for a few hours
  • 8
    Decorate with raspberries before serving.

    The following morning go for a run to use up some of the weight you have gained by eating two portions!
