Chicken Tortilla Soup
Ingredients
- 4 ½ cups low-sodium chicken broth (2 ½ cans)
- 1 can petite diced tomatoes (14.5 oz)
- ¾ cup finely chopped yellow onion
- 4 cloves garlic (pressed through a garlic crusher)
- 2 ½ teaspoons chili powder
- 1 ½ teaspoons ground cumin
- ¾ teaspoon paprika
- ½ teaspoon ground coriander
- 1 ½ pounds boneless skinless chicken breasts
- 1 can black beans (14.5 oz (drained and rinsed))
- 1 ½ cups frozen corn
- 1 tablespoon fresh lime juice
- ¼ cup chopped fresh cilantro
